Vegetable Jalfrezi

Vegetable Jalfrezi is a very tasty and healthy dish which can be served with chappathi, Paratha, Poori. Ingredients 1. Carrot, Beans, Cauliflower, Potato, Green Peas - 1/2 cup each 2. Coraiander Leaves - 2 tsp 3. Curd - 1/4 cup 4. Cashew Nuts made into a paste - 1/4 cup 5. Fresh Cream - 30 ml 6. Turmeric Powder - 1 tsp Pepper Powder - 1 tsp Coriander Powder - 1 tsp 7. Asafetida Powder - 1/4 tsp 8. Oil - 30 ml 9. Onion - 2 Tomato - 2 Capsicum - 2 10. Green Chilly, Ginger, Garlic chopped - 1 tsp 11. Jeerakam (Cumin) - 1/2 tsp 12. Salt - as to taste 13. Sugar - 1 tsp Method Cook the first set of vegetables. Heat oil in a pan and splutter mustard seeds. Saute Ginger, Garlic, Green Chilly, Onion, Capsicum, and tomato in order. Add cooked vegetables to this and mix curd with the vegetables. Mix Cashew Nut paste and Fresh Cream to the curry. Add Turmeric Powder, Corander Powder, Pepper Powder, and Asafetida Powder. When the curry starts to boil, add salt and sugar. Garnish with coriander leaves and serve hot with chappathis.
