Coconut Rice

Coconut Rice is one of the most popular food items in Kanyakumari. It is less spicy and easily digestible. It is delicious as well as less time consuming and this is probably the reason of its increasing popularity. Ingredients
  • Rice - 1 cup (cooked)
  • Coconut - 1/2 cup (shredded)
  • Onion - 1 lengthwise chopped
  • Green chillies - 2 chopped
  • Ginger - 1/2 inch piece
  • Cardamom - 2
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Channa dal - 1/2 tsp
  • Cashew nuts - 5
  • Curry leaves - 5
  • Coriander leaves - few
  • Oil - 4 tsp
  • Salt - to taste
Method Heat a pan with oil. Add cardamom. Then add mustard seeds, urad dal, channa dal and cashew nuts. When they colour change to golden brown add curry leaves, onion, ginger, coconut and green chillies. Saute until the raw smell disappears. Then add the cooked rice and salt. Mix gently. Garnish with Coriander leaves. Serve with papad or chips.
