Carrot Kheer

Carrot Kheer is an excellent tasty recipe which can be prepared easily for an evening drink. Ingredients Carrots - 1/4 kg Milk - 1/2 litre Cashews - 1/2 cup Badam - 1/2 cup Sugar - as per taste Method Peel the carrots and cut them into small pieces. Add the carrot pieces to a pressure cooker along with cashews and badam, and also 1/2 litre of milk. Cook for about 2 whistles. Allow the mixture to cool down. In a blender, blend the cooked carrot mixture along with the rest of the milk and sugar. Cool the kheer and serve garnished with cardamom powder.
