Method
Peel the carrots and cut them into small pieces.
Add the carrot pieces to a pressure cooker along with cashews and badam, and also 1/2 litre of milk.
Cook for about 2 whistles.
Allow the mixture to cool down.
In a blender, blend the cooked carrot mixture along with the rest of the milk and sugar.
Cool the kheer and serve garnished with cardamom powder.

Carrot Kheer
Carrot Kheer is an excellent tasty recipe which can be prepared easily for an evening drink.
Ingredients
Carrots - 1/4 kg
Milk - 1/2 litre
Cashews - 1/2 cup
Badam - 1/2 cup
Sugar - as per taste
