Mughalai Bhaigan -
Prepare Mughalai style fried brinjal curry.

Ingredients:
Brinjal (Cut the brinjals keeping the
stem) - 250g
Oil - as necessary
Hing (Asafoetida) - 1/2 tsp
Tomato - 2
Red Chilly Powder - 1/2 tsp
Dry ginger powder - 1/2 tsp
Fennel seeds powder - 1/2 tsp
Salt - as to taste
Water - 1/2 cup

Method:
Heat oil in a pan and fry till half
fried.
Saute hing and tomato and stir for some more time.
Add the rest of the ingredients and water and mix well.
When the gravy thickens, remove from fire and serve hot.
