Carrot & Beans Poriyal Recipe - very healthy and tasty poriyal (thoran).

Ingredients:
Carrot - 1/4 kg
Beans - 1/4 kg
Onion(sliced) - 1 no
Chilly powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Salt - As reqd
Coconut grated - 1/2 cup
Coconut oil - 1 tsp
Mustard seeds - 1 tsp
Curry leaves - A few |

Method:
1)Cut the vegetables into small
pieces.
2)Mix together the chopped vegetables, onion, chilly powder, turmeric
powder and salt.
3)Add some water and cook it well together, until the vegetables
become soft.
4)Heat a tsp of oil in a pan.
5)Splutter mustard seeds.
6)Add curry leaves and saute for a while.
7)Add the cooked vegetables to this and mix them with grated coconut.
8)Cook the mixture until the poriyal is dry. |
