Brinjal Fry

Brinjal Fry - Good accompaniment with Rice and Chappathi. Recipe Source : Vanitha Magazine. Ingredients 1. Brinjal - 1/4 kg 2. Chilly Powder - 1 tbsp Salt as to taste Pepper - 1 tsp Ginger - 1 small piece Garlic - 2 pieces Small Onion - 2 3. Oil - 1 cup Method Cut Brinjal into round pieces of 1/4 inch thickness. Wash and drain them in water and keep aside. Grind the second items to a fine paste and marinate the brinjal pieces. Keep it for sometime. Heat oil in a pan and fry the brinjal pieces like you do for fish fry.
