  Rice Recipes -> Vegetarian Rice Recipes -> Coconut Rice    

 

Coconut Rice is one of the most popular food items in Kanyakumari. It is less spicy and easily digestible. It is delicious as well as less time consuming and this is probably the reason of its increasing popularity.

 

Ingredients:

 

Rice – 1 cup (cooked)
Coconut – ½ cup (shredded)
Onion – 1 lengthwise chopped
Green chillies – 2 chopped
Ginger - ½ inch piece
Cardamom - 2
Mustard seeds – ½ tsp
Urad dal – ½ tsp
Channa dal – ½ tsp
Cashew nuts – 5
Curry leaves – 5
Coriander leaves - few
Oil – 4 tsp
Salt – to taste

Coconut Rice
 

Method:

Heat a pan with oil. Add cardamom. Then add mustard seeds, urad dal, channa dal and cashew nuts.

When they colour change to golden brown add curry leaves, onion, ginger, coconut and green chillies.

Sauté until the raw smell disappears.

Then add the cooked rice and salt. Mix gently. Garnish with Coriander leaves.

Serve with papad or chips.
