 Non Vegetarian -> Egg Recipes -> Varutharacha Egg Curry

 
  Varutharacha Egg Curry is very good dish ideal as a side dish for Chappathis or Bread.

 

Ingredients:

 

1. Eggs boiled and cut into two - 4 nos
2. Small Onions (sliced small) - 200 g

    Ginger-Garlic paste - 1 tsp
3. Curry leaves - 2 stems

4. Turmeric powder - 1/2 tsp

    Chilly powder - 3/4 tsp

    Coriander Powder - 1 1/2 tsp

    Pepper Powder - 1/2 tsp

5. Tomato chopped - 1

    Green Chillies - 4

6. Coconut fried and grounded - 2 tsp

7. Coriander leaves -  for garnishing
8. Lemon juice - 1/2 of a lemon
9. Oil - 2 tbsp

Varutharacha Egg Curry

Method:

Pour oil into a pan and saute small onions, ginger and garlic.
 

Add curry leaves and masala powders (item no : 4) and saute for another two minutes.
 

Add tomato and green chilly to this and saute.
 

Add enough water and salt. And allow it to boil.
 

Add the grounded coconut and egg to the curry.

 

When the gravy starts to thicken, add lemon juice and keep down from the burner.
 

Garnish with coriander leaves and curry leaves and serve hot with Appam or Chappathis.
